3 versions of Pad Thai sauce

- Mix together fish sauce, ketchup, Worcestershire, chili-garlic sauce and sugar.

- 1/3 cup good-tasting chicken stock
- 3 Tbsp. rice vinegar (or substitute white vinegar)
- 1 Tbsp. lime juice
- 3-4 Tbsp. brown sugar
- 2 Tbsp. fish sauce
- 1 Tbsp. soy sauce*
- 1/8 tsp. white pepper
V3
- 3/4 Tbsp. tamarind paste (available at Asian/Indian food stores)
- 2 Tbsp. fish sauce
- 1-3 tsp. chili sauce (depending how spicy you want it)
- 2 – 3 Tbsp. brown sugar (more or less to taste)
