Yam Nuea – Thai Beef Salad
Ingredients/method
- Beef 500 g (1 lb) pork belly slices
- 2 tbsp Soy sauce
- 1 tsp Baking soda
- 1⁄2 teaspoon fresh ground black pepper
Prep

Marinate velvet the beef UNLESS it is a very good cut

Take the sliced beef and marinate in soy and the baking soda
- When ready to cook then grill v v quickly
Salad
- 1/4 to 1/2 Lettuce
- 2 tomatoes sliced
- 1⁄2 cup thinly sliced shallot (about 2 large)
- 1/2 red onion v finely sliced
- 4 scallions, cut into 1/2 inch pieces
- Handful mint leaves
- Handful coriander leaves
- Seedless cucumber
- Chinese celery (optional – I do not like it)
Cut and prepare in a large bowl and mix
Nam Yum (Dressing)
- 3 tbsp Lime juice
- 3 tbsp Fish sauce
- 1.5 tbsp Sugar or palm sugar*
- 4 thai chilies, finely chopped, to taste
- 1/4 cup mint leaves
- 1/4 coriander leaves
- 2 tsp crushed garlic
- 2 tsp crushed lemongrass
Mix the ingredients making sure all melted – if not then heat quickly in a pan
Serving
Lay the beef over the salad then add the dressing and mix well
You can if you wish add crushed peanuts for texture
Serve with rice
