Indian Spiced Hot Wings

Ingredients

  1. 8 chicken wings split into drums and flats
  2. 1 tbsp. olive oil
  3. 1 tsp. garlic and ginger paste
  4. 1 tsp. garam masala
  5. 1 tsp. dried fenugreek
  6. ½ tsp. turmeric
  7. Red food colouring (optional)
  8. 1 tsp. mint sauce
  9. Pinch salt

Sticky Glaze:

  1. 2 tbsp. Sweet chilli sauce
  2. 1 tbsp. Soy sauce
  3. 2 tbsp. Fresh coriander chopped
  4. Juice ½ Lime
  5. 1 chilli deseeded and chopped

Method:

1: Pop the chicken wings into a bowl, along with the ingredients shown in the recipe. Give it a good toss until the wings are completely coated then place onto the crisp plate within your air, fryer drawer, spray with oil and cook at 200°c for 16 minutes shaking halfway through.

2: Pour the sweet chilli sauce and soy into a pan over a medium heat, then add in the cooked wings, toss well to coat, then scatter in the fresh coriander and a good squeeze of lime juice. Finally to serve, scatter over as much fresh chilli as you dare.
