Yam Nuea – Thai Beef Salad

Ingredients/method

  1. Beef 500 g (1 lb) pork belly slices
  2. 2 tbsp Soy sauce
  3. 1 tsp Baking soda
  4. 1⁄2 teaspoon fresh ground black pepper
Prep
  1. Marinate velvet the beef UNLESS it is a very good cut
  2. Take the sliced beef and marinate in soy and the baking soda
  3. When ready to cook then grill v v quickly 

Salad

  1. 1/4 to 1/2 Lettuce
  2. 2 tomatoes sliced
  3. 1⁄2 cup thinly sliced shallot (about 2 large)
  4. 1/2 red onion v finely sliced
  5. 4 scallions, cut into 1/2 inch pieces
  6. Handful mint leaves
  7. Handful coriander leaves
  8. Seedless cucumber
  9. Chinese celery (optional – I do not like it)

Cut and prepare in a large bowl and mix

Nam Yum (Dressing)

  1. 3 tbsp Lime juice
  2. 3 tbsp Fish sauce
  3. 1.5 tbsp Sugar or palm sugar*
  4. 4 thai chilies, finely chopped, to taste
  5. 1/4 cup mint leaves
  6. 1/4 coriander leaves
  7. 2 tsp crushed garlic
  8. 2 tsp crushed lemongrass

Mix the ingredients making sure all melted – if not then heat quickly in a pan

Serving

Lay the beef over the salad then add the dressing and mix well

You can if you wish add crushed peanuts for texture

Serve with rice
